Summer Menu | Meatball Pappardelle | Jamie’s Italian


Some days you just really fancy a
beautiful meatball dish. We’re doing it with this incredible pappardelle. So
we’re making this pappardelle every single day from organic eggs, semolina,
tipo 00 flour, and look at it. Look at the shape, it’s funky! And in
the old days we used to extrude the pappardelle, we used to kind of break one
side to make those little kind of frills, and of course the frills, they grab
all the sauce. So we’re gonna cook this off. The fresh pasta only takes a couple
of minutes to cook, and here I’ve got some beautiful meatballs. Have a little
look at these. Here’s some really nice meatballs with beautiful pork and nduja,
which is a really famous soft salumi. And here is some Calabrian chili with the
most amazing oil. Look at the colour of that oil. And we source that, and the
thing about the Calabrian chili’s is it is warm, but there’s a sweetness and a
fruit to it that I just absolutely love. So as the pasta cooks, we’ll brown off
those meatballs and then we’ll break it with some beautiful passata, which is a
garlic, basil, tomato sauce. You want to get some nice colour on there. The herb
we’re going to use is some parsley. It”s nice and fresh. Super good. Look, so
look at these balls. Look at the colour and look at the chili. Now we go in with
the passata, we hit it with the parsley, and then we have the pasta here, and I
maybe nick a little bit of that cooking water. Just really nice to agitate the
pan. Look at the way that the pasta just holds on to the sauce. So good, so so good.
Gorgeous. Wonderful, wonderful flavourings in there. Look at that shape. I just love
that pasta. Meatball pasta just makes me really happy. Sometimes I just
feel like it. It’s one of those things, it’s an ultimate comfort food. Such a
wonderful wonderful indulgence. Some wonderful parmesan. That is
one of my favourites. Beautiful nduja meatballs, with that fantastic
pappardelle, sweet tomato sauce, and those amazing Calabrian chilies. Happy days.

    Jamie's Italian? You can't just mix pasta (wrong pasta variety, btw), parmigiano and tomatoes, and assume you're making an Italian dish. With those odd meatballs that looks more like a Lady and the Tramp meal, which is nowhere to be found in Italy.

    I had this amazing dish at Jamie's Italian in Liverpool, last month. It was delicious! I asked the waiter for some chilli oil, and he brought me something amazing – roasted chillies in olive oil. This made the pappardelle one of the top meals I ever had.

    This is the dish I had when my husband and I visited London!! It was divine! The spice was unexpected but just as you said a bit sweet. Wish I could eat it again!

    To all the whingers whinging about the lack of “information/recipe” for these dishes…! Would you expect to walk into a restaurant and have the chef come and explain in detail how he’s made every item on the menu???? NO!!! Jamie is giving you a quick demo and promoting what his restaurants are serving. Wanna know more about the meal he just made?? Go in and freakin’ try the dish at his restaurants!!! Wanna know more about how to cook?? Buy his freakin’ cook books!! Simple

    Thanks for these easy videos. I often have hypnotherapy clients whose eating habits are constructed from whatever local convenience food happens to be. Whether they come for weignt control, anxiety, depression, or what-have-you, really bad, chemical laden "food" usually plays a big part in their lives and the phrase "I've got to learn how to cook." is a daunting, thoroughly intimidating. Can't tell you how many clients I've referred to your channel, telling them with a kind of venn diagram, to simply choose the things in the junction of what they want to eat and what they think they can handle in the kitchen at the moment.     Was on holiday in London last week. Decided to order this in your Piccadilly restaurant and I have to say, it is really f-ing amazing! The flavour explosion from the meatballs combined with a little hotness of the sauce. Should have ordered 2 because the plate was empty before I knew it.
